This Natural Sauvignon Blanc was handpicked, hand destemmed and then fermented on its skins, at very cool temperatures. After ferment the wine, with its skins, was left to age for 3 months. Drained, and lightly basket pressed the wine was left to settle for two weeks in old wine barrel. Following this the wine was racked and bottled with no fining and no filtration. There will be sediment in this wine. On the palate this wine makes a statement. Showing many typical Sauvignon Blanc characters with moderately deep aromas of tropical fruits and fresh herbs. Soft, elegant and smooth on the palate with a soft, crisp acidity finish. Best to be drunk at 8-12 degrees where you really get to appreciate the characters from the whole berry ferment. Vegan Friendly, Unfined, Unfiltered, Sediment may be present. Bottles are 375ml.
