Certified organic, wild ferment, single vineyard. From a "super-stony vineyard that likes a bit of heat" which it got in the 2019 vintage. 1.2 tonnes of grapes were fermented in stainless steel barrels, puncheons and a small tank. The wine reflects the ripe/less ripe character which was clearly evident on the half pink, half green bunches. Citrus, orange, lime and green apple flavours with a saline-mineral character. Light straw colour with a complex, nutty, smoked charcuterie kind of bouquet, the palate equally interesting with layers of flavours, minerally and savoury, not overtly fruity. The palate is texturally fine and rich but understated, and enlivened by mouthwatering, but balanced acidity. It's spring-water-light and properly dry. Later, more lemon zest and minerals on the nose. A really individual and delicious dry white wine.
