The Reserve Chardonnay fruit is estate grown in the Denmark subregion of the Great Southern in Western Australia. Juice from handpicked and whole bunch pressed fruit is barrel fermented in a mixture of new and second use French oak barriques. Savoury and textural intensity is introduced through the use of selected & wild yeasts, and part maturation on lees with secondary malolactic fermentation. The wine spends 11 months in barrel before minimal fining and bottling. Pale golden yellow colour. A highly complex, perfumed nose of citrus and fresh nectarines is balanced by spicy French oak and a richer savoury character. Palate initially shows grapefruit, then ripe stone fruits. A more savoury mid palate finishes with lingering citrus acidity balanced by vanillin French oak. This wine has perfect balance between fruit flavour, texture and length. Drinks well on release, this Reserve Chardonnay will show even more character after 1-2 years, or cellar mid-term in good conditions.
