This wine is produced from Pinot Grigio grapes organically grown on the Sambuca di Sicilia estate in the province of Agrigento. The vineyard is located on the north side of the estate, protected from the strong summer heat and cooled by breezes from the nearby sea.
Winemaking: The grapes are destemmed and softly pressed at less than 0.5 bar, decanted naturally and fermented in steel tanks for 10 days at a controlled temperature (18°C) . Maturation on the lees for 5 months in steel with continuous stirring of the fi ne or noble lees, so as to give the wine greater body.

Nose: Floral aroma of white flowers and Mediterranean herbs. It is fresh and lively on the palate with a persistent finish and a distinct sapid sensation.
