The Natural Wine Co. was founded by a collective of wine professionals who came together to create organic, preservative-free wines with minimal intervention. Led by experienced organic grower Jason O’Dea, whose vineyards in Canowindra, NSW have been farmed organically for years, the team focuses on letting the land guide the winemaking process. Their philosophy is simple: organic farming, wild fermentation, and minimal influence from the winemaker. Eash wine reflects the unique character of the region and vineyard, offering a pure, vibrant expression of nature in every bottle.
Color: Ripe plum in colour.
Nose: This shiraz has aromas of raspberry, cherry and peppered tobacco complimented with some clove spice. These flavours follow onto the palate in an enticing way and are well-balanced by silky tannins and vanilla spiced oak. Being medium-bodied, these wines can be enjoyed upon release, or benefit from short-term cellaring.
Palate: Flavours in the mouth are very inviting, highlighted by blueberry muffin characters. The bright fruit characteristics give a perception of sweetness from the intense fruit flavour although the wine is dry.
Pairings: Enjoy with grilled or roasted red meats, roasted duck, wild-mushroom risotto, or aged cheddar.
